The project called for the remodeling of a 90 year old brick building in the center of Princeton, New Jersey. This two-story building (38 ft wide and 150 ft long) originally built as a horse stable, had undergone several transformations. The new building program called for inserting a 1,000 square foot microbrewery and 210-seat restaurant into the space while preserving the location of existing kitchen and service areas.

In our design the microbrewery was installed as an autonomous building. The restaurant thus became an “exterior” space affording views into the brew house and the beer making procedure – an urban theatre. Rich colors and accent lighting emphasized the spatial diversity created within the brick shell further enhancing the theatrical quality of the space.
